I just took a course on the Middle East and dealt with this issue.
It's actually not the Qur'an (recited then written by the Prophet Muhammad as direct revelations from God) where it mentions "72 virgins" but the Hadith (a collection of "supposed" stories that Muhammad said or actions he did to be used for guidance in how one is supposed to live their life. These stories were passed on orally from one person to another until it was written) and this is disputed as not being accurate. At one point there were hundreds of thousands of stories about Muhammad (most of them false) and 6 collections were verified as authentic being tested 2 ways: one, by proof of one person being able to pass the story along to the next person (they were both alive at the same time?) and two, by whether or not they reflect what the Qur'an says. The 72 virgins have a weak proof of one person passing along the story to another and killing people for Jihad (which means struggle; like struggle for equality and peace) goes against everything in the Qur'an. This is just another misrepresentation of religion (Like the Jim Jones kool-aid Jonestown massacre) to get people to kill themselves and others.

I dug around on this casually a while back and the various interpretations of the Koran I read were sort of all over the place on this, but the main thing I took away from it is that the fundamentalists have taken the text and interpreted it in a way that is beneficial to their cause, just as some sects of fundamentalist Christians have done with parts of the old testament like the Book of Genesis, to spur followers into action.

Islam is a beautiful religion that seeks equality; even with women. Women are equal to men in Islam. They are so equal that their shouldn't be any distinction. Thus, the veiling of women (Hijab or scarf worn around the head and sometimes face). The hijab or head dress was an attempt to desexualize women so they could be like men. But, many of the teachings have been misinterpreted to oppress women. There is an Islamic feminist movement to help create equality for women within the Islamic (teachings) framework. It's a struggle that they (interestingly most supporters are men) still striving for.
